A meatless alternative to Taco Night!
In a small pot, add the water, lentils, onion, garlic and all the spices. Bring to a boil, then reduce the heat and simmer for about 15 minutes. The lentils should be soft, but not mushy. While the lentils are cooking brown the tortillas over medium heat. Mix the juice of one lime with the honey. Then simply assemble the tacos. Add the lentils and top with lettuce or microgreens and shredded carrots. Drizzle the honey lime mixture over the greens. Top with avocado and cotija cheese.

½ red onion, chopped 2 cloves garlic, minced 3 cups water 1 ½ tsp. cumin 1 ½ tsp. coriander 1 ½ tsp. smoked paprika ½ tsp. chili powder ½ tsp. salt 1 cup lentils 1 cup baby romaine, or microgreens ½ cup shredded carrots 1 avocado, chopped Juice of 1 lime 1 tsp. honey 10 small corn tortillas
