Crunchy Baked Chipotle Tacos

Did someone say "Taco Tuesday"? These are great for any night of the week. One of my kid's favorite meals. Great for week nights when our schedules are full.


My 6 year old loves to help me in the kitchen. She loves to go out into the garden, pick the ingredients and help me make dinner. She asks questions, about what I'm doing and what we are making. I bought her a plastic chef knife, and she is getting pretty good with her knife skills. My oldest son,... not so much. On the rare occasion he wants to help me in the kitchen, I take the opportunity.


This particular night was a karate night. So we still had homework to do, baths to take and dinner to make. I needed something quick, and fairly easy, that he could assist me with. Tacos are easy enough, and I like to mix up the flavor profiles. This recipe isn't particularly special or fancy, but the flavor combinations are unique. And it's become one of our kids favorites.


I had some ground turkey and a can of chipotle tomatoes. So I browned the ground turkey in a skillet with a little garlic. I seasoned the turkey with salt, pepper and some chipotle powder. Added in the tomatoes and let them simmer until almost all the liquid had cooked out. Then we filled taco shells with the mixture, and topped them with queso fresco cheese, and some cheddar cheese. We stacked them in a baking dish and baked them at 400 degrees until the cheese was melted and the tortillas were crispy. Then like any other taco, added our toppings. Super easy. Super delicious.


Oven Baked Chipotle Tacos


1 lb ground turkey

2 cloves of garlic, minced

1 can of Chipotle Tomatoes

queso fresco cheese

cheddar cheese

romaine lettuce, slice thinly

cherry tomatoes, sliced in half lengthwise
